Indulgent Fondue Savoyarde : A Classic Swiss Cheese Delight

Ingredients:

  • 8 ounces Gruyère cheese, grated
  • 8 ounces Emmental cheese, grated
  • 1 clove garlic, halved
  • 1 cup dry white wine (such as Sauvignon Blanc)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons kirsch (cherry brandy) or another clear spirit (optional)
  • Freshly ground black pepper, to taste
  • Nutmeg, to taste
  • Crusty bread (baguette or sourdough), cut into bite-sized pieces

Instructions:

  1. Prepare the Pot:
    • Rub the inside of a fondue pot with the halved garlic cloves. Discard the garlic.
  2. Mix the Cheese:
    • In a bowl, combine the grated Gruyère and Emmental cheese. Toss with cornstarch to coat the cheese evenly. This helps to prevent clumping.
  3. Heat the Wine:
    • In the fondue pot, heat the white wine and lemon juice over medium heat until just simmering.

    • Gradually add the cheese mixture to the pot, stirring continuously in a figure-eight motion until melted and smooth.
  5. Add Flavorings:
    • If using, stir in the kirsch. Season with black pepper and a pinch of nutmeg to taste.
