Delicious Tartiflette : A Hearty French Comfort Dish

Ingredients:

  • 2 pounds potatoes (Yukon Gold or Russet), peeled and sliced
  • 1 large onion, thinly sliced
  • 6 ounces lardons (or bacon, chopped)
  • 1 pound Reblochon cheese (or other creamy cheese)
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh thyme (optional, for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook the Potatoes:
    • Boil the sliced potatoes in salted water for about 10 minutes until slightly tender but not fully cooked. Drain and set aside.
  3. Cook the Lardons:
    • In a large skillet, cook the lardons over medium heat until crispy. Add the sliced onions and cook until softened and translucent, about 5-7 minutes.
  4. Layer the Ingredients:
    • In a greased baking dish, layer half of the potatoes, then half of the onion and bacon mixture. Pour half of the heavy cream over the top. Repeat with the remaining potatoes, onion mixture, and cream.
  5. Add Cheese:
    • Cut the Reblochon cheese in half horizontally and place the two halves, rind-side up, on top of the potatoes.
  6. Bake:
    • Bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
  7. Serve:
    • Let it cool slightly before serving. Garnish with fresh thyme if desired.
