Fluffy Soufflé au Fromage: A Decadent French Cheese Experience

Ingredients:

  • 2 tablespoons unsalted butter (plus extra for greasing)
  • 3 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 cup grated cheese (Gruyère, Emmental, or a mix)
  • 4 large eggs, separated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • A pinch of cayenne pepper (optional)
  • Fresh herbs for garnish (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a 1.5-quart soufflé dish with butter and sprinkle with flour.
  2. Make the Roux:
    • In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, until bubbly. Gradually whisk in the milk, cooking until the mixture thickens (about 3-5 minutes). Remove from heat.
  3. Add Cheese and Seasoning:
    • Stir in the grated cheese until melted. Add the egg yolks, salt, black pepper, and cayenne pepper (if using). Mix well.
  4. Beat Egg Whites:
    • In a separate bowl, beat the egg whites until stiff peaks form.
  5. Combine Mixtures:
    • Gently fold a third of the beaten egg whites into the cheese mixture to lighten it. Then, carefully fold in the remaining egg whites until just combined.
  6. Transfer to Dish:
    • Pour the mixture into the prepared soufflé dish. Smooth the top.
  7. Bake:
    • Bake in the preheated oven for 25-30 minutes, until puffed and golden brown. Do not open the oven door during baking.
  8. Serve:
    • Serve immediately, garnished with fresh herbs if desired.

Enjoy:

  • Savor your light and cheesy Soufflé au Fromage!

Tips:

  • Make sure not to overmix the egg whites to keep the soufflé airy.

Enjoy your delicious soufflé!
