Creamy Risotto Recipe

Ingredients:

  • 1 cup Arborio rice
  • 4 cups chicken or vegetable broth (kept warm)
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • 1/2 cup dry white wine
  • 1 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • Optional: 1 cup mushrooms, asparagus, or peas for additional flavor

Instructions:

  1. Sauté Onions:
  • In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes).
  1. Toast the Rice:
  • Add the Arborio rice to the pan, stirring to coat the grains with oil. Cook for 1-2 minutes until the rice is lightly toasted.
  1. Add Wine:
  • Pour in the white wine and cook until it’s mostly absorbed, stirring frequently.
  1. Add Broth Gradually:
  • Begin adding the warm broth, one ladle at a time, stirring continuously. Wait until the broth is mostly absorbed before adding more. This process will take about 18-20 minutes.
  1. Add Optional Ingredients:
  • If using mushrooms, asparagus, or peas, add them halfway through the cooking process.
  1. Finish with Cheese and Butter:
  • Once the rice is creamy and al dente, remove it from heat. Stir in the Parmesan cheese and butter. Season with salt and pepper to taste.
  1. Serve:
  • Serve immediately, garnished with additional Parmesan or fresh herbs if desired.
