Classic Osso Buco Recipe

Ingredients:

  • 4 veal shanks (about 1.5 inches thick, bone-in)

Instructions:

  1. Prepare the Shanks:
  • Pat the veal shanks dry with paper towels. Season them generously with salt and pepper.
  1. Brown the Shanks:
  • In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. Add the veal shanks and brown on all sides (about 5-7 minutes). Remove the shanks and set aside.
  1. Sauté the Vegetables:
  • In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute.

  • Cover the pot and reduce the heat to low. Cook for about 1.5 to 2 hours, or until the meat is tender and falling off the bone.
  1. Prepare the Gremolata:
  • In a small bowl, combine chopped parsley, lemon zest, and minced garlic. Set aside.

  • Remove the veal shanks from the pot and place them on serving plates. Spoon the sauce and vegetables over the shanks. Garnish with gremolata before serving.
