Homemade Sriracha Sauce

Ingredients:

  • 1 lb (about 450g) fresh red chili peppers (like Fresno or red jalapeños)
  • 4 cloves garlic, minced
  • 1/2 cup distilled white vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 tablespoon water (optional, for desired consistency)

Instructions:

  1. Prep the Peppers: Remove the stems from the chili peppers and slice them in half.
  2. Blend: In a blender or food processor, combine the peppers, minced garlic, vinegar, sugar, and salt. Blend until smooth.
  3. Cook: Pour the mixture into a saucepan and bring it to a simmer over medium heat. Cook for about 5-10 minutes, stirring occasionally, until the sauce thickens slightly.
  4. Cool and Store: Remove from heat and let cool. If you want a thinner consistency, add a bit of water. Transfer to a clean jar or bottle and refrigerate.
