Light and Savory Japanese Zucchini Noodles with Miso Dressing

Ingredients:

  • 2 large zucchinis, spiralized (or julienned)
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1/4 cup carrots, shredded
  • 1/4 cup red bell pepper, thinly sliced
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds (for garnish)

For the Miso Dressing:

  • 3 tablespoons white miso paste
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon sesame oil
  • 1-2 tablespoons water (to thin, as needed)

Instructions:

  1. Make the Miso Dressing: In a small bowl, whisk together the miso paste, rice vinegar, soy sauce, honey (or maple syrup), and sesame oil. Add water a little at a time until you reach your desired consistency.
  2. Prepare the Zucchini Noodles: Heat sesame oil and olive oil in a large skillet over medium heat. Add the spiralized zucchini and cook for about 2-3 minutes until just tender, stirring occasionally.
  3. Add Vegetables: Stir in the shredded carrots and sliced bell pepper, cooking for another 2 minutes until slightly softened.
  4. Combine: Remove the skillet from heat and drizzle the miso dressing over the zucchini noodles and vegetables. Toss gently to combine.
  5. Serve: Transfer to serving bowls and garnish with chopped green onions and sesame seeds. Enjoy warm or at room temperature!
