Flavorful Indian Spiced Chickpea Bowl

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cooked brown rice or quinoa
  • 1 cup spinach or kale, chopped
  • 1/2 cup diced cucumber
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • Fresh cilantro, for garnish
  • Yogurt or raita (optional, for serving)

Instructions:

  1. Spice the Chickpeas: In a skillet, heat olive oil over medium heat. Add the chickpeas, cumin, turmeric, garam masala, paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chickpeas are heated through and slightly crispy.
  2. Prepare the Base: In serving bowls, add a scoop of cooked brown rice or quinoa as the base.
  3. Add Greens: Top the rice with the chopped spinach or kale, allowing it to wilt slightly from the heat of the chickpeas.
