Zesty Mediterranean Chickpea Salad

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled (optional)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Combine Ingredients: In a large bowl, mix together chickpeas, cherry tomatoes, cucumber, red onion, olives, feta cheese (if using), and parsley.
  2. Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  3. Dress the Salad: Pour the dressing over the salad and toss gently to combine.
